Here it is. And it is worth every bit of effort to make this. Believe me! If there is one thing I would never lie about, it is an apple pie!
Anyway...start out by melting 2 sticks of butter in a heavy sauce pan.
And get some GOOD apples. DO NOT buy those nasty Granny Smith's from the grocery store. You know they are really only green cardboard apple props. Yuck! Buy some local large crisp tart apples like these Honey Crisps.
Now add 6 tablespoons of flour to the melted butter and whisk it in until it forms a paste
It should be nice and smooth.
Whisk in 1/2 cup of water. If you have apple cider use it instead of water. (no, not apple cider vinegar!)
Then add 1 cup of white sugar...
And 1 cup of brown sugar. Whisk this until it boils, simmer for about a minute and turn the heat off.
Sprinkle some flour on your counter top.
Use whichever pie dough happens to be your favorite. I always add a bit of sugar to my recipe. I do not like flour dough that tastes like play dough.
Roll it out to fit a 9 inch pan. Place it in the pan with the edges hanging over the sides. I forgot to take that picture. Hey, for me this is pretty good so far. I haven't forgotten to photograph any major steps....yet!
Meanwhile your sauce should be cooling off but still a bit warm. Don't dare taste the sauce at this point or there might not be enough left for the pie.
Roll out the other half of your crust and cut into equal pieces. Use a pizza cutter if you have one.
Pile the sliced apples on top of the bottom crust. Ok, I forgot to take pictures while I peeled and sliced the apples. Use your imagination!
Lay about 6 of the dough strips across the top of the apples.
Then fold every other strip back in half.
Lay another strip across the middle in the opposite direction right in front of the folded strips.
Then unfold those strips and fold back the others.
And lay another strip down. Are you following this? I hope so because I am getting confused.
It should look like this when you are done. crimp the edges and place this on foil on a cookie sheet because I guarantee you, this will boil over. But it does not burn and smoke as long as you have it on foil on the cookie sheet. If you want a visit from your cute local firefighters, skip the above step.
I pour the sauce into a measuring cup with a spout for easy pouring. This part is important: SLOWLY pour the sauce into each hole in the lattice crust. Pour until all the sauce is used up.
Then place the pie in a preheated 425 degree oven for 15 minutes. After 15 minutes turn the oven down to 350 degrees and bake for about 50 minutes. The pie is done when the crust is golden and the sauce is bubbling inside the pie.
The finished product! I lift the pie off of the foil as soon as I remove it from the oven and place it on another sheet of foil which I crimp around the edge of the pan. This saves the mess you could have from the sticky pie bottom.
This pie is so good don't even think about putting ice cream on it.
