I tried a new apple pie recipe. This is a real keeper. I will be making it again soon and will post the steps and the recipe.
Recipe #1
This is a really simple, really good recipe for snacking. Dump 2 bags of pretzel nuggets in a zip lock baggie.
Add 1 cup or more of Parmesan cheese.
Take 2 packages of powdered spaghetti mix.
Add these to the pretzels and cheese.
Add about 3 tablespoons of oregano. Shake the bag to mix all the ingredients. Then add 3 tablespoons of oil. Shake the bag until all the pretzels are coated.
Pour them out onto cookie sheets. Bake in a 250 degree oven until the Parmesan turns golden.
Allow to cool and then transfer to a zip lock bag. These are irresistible.
Recipe #2
This is a very good cole slaw recipe. Start out with a head of cabbage. I grew this one!
Shred it so you have about 8 cups.
Add about a cup of shredded carrots.
Then add about a half cup of diced onion.
In a food processor, blend 1/3 cup of sugar, 1/2 tsp. salt, 1/2 tsp. pepper, 1/4 cup buttermilk, 1/2 cup mayonnaise, 1 1/2 tablespoons white vinegar, and 2 1/2 tablespoons lemon juice.
Pour this over the cabbage mixture and turn to blend.
Pour all of this into a zip lock bag and place in the refrigerator turning occasionally to blend. This is best made a day in advance of eating.
Recipe #3
Baked Beans....... This is a first for me. I have never ever made baked beans using canned beans. I just never "got" canned beans. Making baked beans from dried beans has always bean one of my favorite things to do. I love the whole process. Recently I saw a recipe made from canned beans and it looked so good I thought I would give it a try. So, here goes. Start out by cutting peppered bacon into thirds and frying it just until the fat is rendered.
Just until it looks like this. It will continue to cook in the oven.
Dice up one large onion.
And one large green pepper.
Saute' this in the rendered bacon fat.
Deep breath here......buy 2 large cans of pork and beans. I still can't believe I used canned beans. this is the first time in my life I have bought canned beans. I was hoping I wouldn't be the millionth person in the check out line and get caught with canned beans.
Because I like to mix things up, I added a can of black beans and 2 cans of butter beans. I think this makes it look a little more homemade.
Mix to combine.
Add 1 cup of barbecue sauce. I had my own homemade sauce in the frig but I guess you can use any kind you like. Add 1/2 cup brown sugar, 1/4 cup cider vinegar, and 2 teaspoons dijon mustard. Mix it all together.
Pour the mixture into a 9x13 pan and top with the rendered bacon. The key to this is baking it slowly. Bake at 325 degrees for 2 hours. Most of the liquid should be absorbed by the beans at this point.
Since these are still in the oven baking as I post this, I have no idea if this recipe is good or not. I will let you know tomorrow!
I will show the rest of the Labor Day menu tomorrow.
