I made a super easy, super yummy dip for my kids for the coming holiday. If anyone needs an easy but very tasty recipe, try this. This would be great for a football party too.Cut an 8 oz. block of cream cheese into 8 pieces and put it in a baking pan. Sprinkle 2 cups of cheddar cheese over the cream cheese. Pour a cup of Frank's Red Hot sauce over the cheese. Add 1 cup of ranch or blue cheese dressing.
Place this in a 350 degree oven for ten minutes. Stir it to blend and cook 10 more minutes. Meanwhile shred the meat from a roasted chicken. I roasted my own but you could just buy a rotisserie one from the store. Remove the pan from the oven and gently stir to blend. Add the chicken and bake for another 10 minutes.
Place it in a bowl and serve with celery and tortilla chips.
Buffalo Chicken Dip
I roasted a few chickens so I also made a chicken pot pie. Cast aside any memories of those awful floury pies from your childhood. This is the best one baby!
Shred one whole roasted chicken.
Roll out a pie crust. This is leftover cheddar/parmesan dough from the potato pie I made a few days ago.
Saute' leeks and a big onion in some butter. Sprinkle 3 tablespoons of flour over the onions once they soften and stir. Add about 3/4 cup of cream. Then add 3/4 cup of chicken stock.
Add salt and pepper to taste and stir in about 3-4 tablespoons of fresh chopped tarragon.
Fill the shell and cover with a top piece of rolled out dough.
Crimp the edges and brush the top with melted butter.
Cut a small slit to vent the steam. Bake it at 350 for approximately 1 hour.
Killer chicken pot pie.
Eat it and weep.
* Teddy is sick again. She keeps getting soaring high temperatures. Her joints are all swollen and sore. She has a rash on her legs. Over a dozen doctors have looked at her and she has had every test done and they all are normal. She has on and off lameness in one leg. If anyone has a dog that has shown these symptoms let me know what you did.
* I am traveling tomorrow so I will be posting later than usual.

My thoughts are still with you and Teddy. I have always had cats so I am so sorry I can't offer any experiences.
Poor Teddy! I know of no dog with all those symptomes. But lame in one leg, can it be her back that troubles her? My old Erna sometimes gets lame in her back legs and it´s her back that gives those problems. But as soon as she gets her medicine she´s alright again.
My first thought about her joints being swollen and sour is reaumatism. I have a reaumatic disease and that happens to me when it starts. But since the tests doesn´t show anything abnormal I´m very unsure of that. Is it the lyme disease still troubeling her?
I really hope anyone can figure out what it is she is troubled with!
Take care!
Christer.
I wish you a nice trip.

Sending you both some good energy!
I'm also following you now too!
Sorry to hear that Teddy is ill again. It does sound like Lyme disease or some auto-immune symptoms. Maybe some weak chicken soup?
I've been thinking about Chicken Pot Pies for days now, and I'm taking this as a sign that I should get busy and make my own! Thanks for the temptation!;-)
And my hubs especially would love that dip! Another couple of keepers!! Thanks!!
Have a safe trip!
And the dip is a great idea!
Thanks for the recipes.
