This might be one of the best things I have ever eaten. At least this week! But seriously, you should try this. Not only is it scrumptious, it is healthy too.
First make the dressing. Next time I am going to do this in my food processor which would be much better than doing it by hand. Pour 1/2 cup of soy sauce and 1/2 cup of oil into a bowl. add 4 T. of sesame oil. You must add the sesame oil as it is essential to this recipe. Then add 3/4 c. of brown sugar.
Dice 4 cloves of garlic.
Juice 2-3 limes
Peel a knob of ginger
Dice it until you have about 6 tablespoons.
Dice 2 jalapenos after removing the seeds and ribs.
Chop a handful of fresh cilantro.
This is why you want to use a food processor. The cilantro is hard to mix in by hand.
I used my immersion blender which worked. But a processor would still work better.
Set the dressing aside while you assemble the salad.
Boil a pound of linguine, drain and rinse with cold water.
Here is some of the lineup.
Slice red pepper. You can also add yellow and orange ones if you have them. Or green. Or purple, etc. etc..
Thinly slice a head of napa cabbage.
Add a diced up bunch of fresh cilantro.
Slice up green onions and toss them in.
Add some thinly sliced red onion.
Add a big bunch of mung bean sprouts.
Thinly slice a head of iceberg lettuce.
Chop up a bunch of spinach.
Then add some strips of sliced cucumber. Just before serving pour the dressing over everything and toss it all together. This works best if you use your hands. Don't add the dressing too early because you want the veggies to stay rather crisp.
I toasted some cashews and threw them on top before serving.
I made this for Father's day. I also surprised my husband with a trip for he and the Blog Tech to go to spring training camp for the 2011 season. They are the biggest baseball geeks. The trip includes a lot of things but the big one is that they both get to throw out a first pitch at two of the games. They were beside themselves they were so happy and excited. They were buzzing when they sat down to eat but they both stopped talking baseball for 3 whole seconds to tell me how fabulous this salad was. I mean, that is how good this is. My wonderful daughter made her famous toasted marshmallow milkshakes which I wish I had taken a pic of but we were so distracted by how good they were that I forgot.
