The skies began to look formidable.
You could feel it in the air. The birds became silent. The weather channel was lit up in yellows, reds and even scarier....purples!
Teddy paced the floor.
Phewww....it just missed us but the storms that followed were nasty.
The day looked pretty much like this, so I made spaghetti. What else was there to do? I had been wanting to try a new recipe and I am very glad I did. This is my new favorite recipe. At least until I find the next one.
First you make the meatballs. And oh my....if these are not the best meatballs in the entire world I do not know what is!
2 1/2 # ground beef
3 eggs
1/3 cup instant cream of wheat (dry)
3/4 shredded cheese (mozzarella, provolone, etc. I used asiago )
2 tsp. lemon juice
3 garlic cloves minced fine
1 tsp. oregano
2 T. Italian spice mix
salt & pepper to taste
Mix this all together and allow to sit refrigerated for at least 30 minutes to blend flavors. Form into 1 inch balls and place on a greased cookies sheet and bake at 400 degrees for about 20 minutes. Try one to see if it's done. Then eat about ten of them because no one will notice. This recipe makes about 70 meatballs.
While the meatballs are baking melt a stick of butter in a heavy saucepan and add 1 large chopped onion. Sprinkle this with several T. of onion powder and saute just until softened. Add 3 large cans of crushed tomatoes. Stir to combine then add all of the meatballs with their juices. Stir to blend.
Cook 2 # linguine in salted water, drain and return to the pan and mix with 4 T. butter to coat noodles. It sounds like lots of butter but it is a large recipe.
Mix the sauce and meatballs and toss to coat. Mangia! My daughter and her boyfriend fought over the last meatball. That says a lot because he is an extremely picky eater and she hates ground beef.

Strange, several years ago I was making spaghetti and without warning, a tornado went within 50 yards of me...those things are HUGE and LOUD and it was only an F2! I, of course, rushed outside and stood in the middle of the street gawking at it and yes, at the time I lived in a mobile home. It was exhilarating and terrifying at the same time...and STUPID!
I´m glad the tornado missed You!! Tornado´s or as we call them, Tromber, are very rare over here. If we do get one they usually are rather weak. Some roofs on barns may fly away and some caravans too. But for us that´s enormous :-)

I don't do tornadoes.
I do love storms but your sound much more serious than I am used to.
When I lived in Florida we experienced terrific storms. Electric stikes would hit the ground..and travel. People died every single year by lightening.
Still...I do love storms!

We are having our own thunder storm as I speak. No tornado's. Charley the Beagle is hiding, he hates thunder.
Lemon yellow candles, prepared with
patchouli and sandlewood, are burning brightly in the emerald green~green~green baby dishes. :))
