OMG...WOW...YUM...WAHOOO!!!!! I don't think there is a better roll than this in the entire world! I've been meaning to make this recipe for a while and now I wonder why I waited.
I know I am always telling you how good recipes are but this is a killer. You really should try these.
First you make a starter:
1 1/4 cups of bread flour
1 tsp. salt
1/2 tsp. instant yeast
1/2 cup of cool water
Mix all of this together. It will be stiff. Cover it with plastic and sit it in a warm place for 24 hours or overnight. When you uncover it, it will be bubbly.
The next day:
Dough:
All of the starter
1 cup plus 2 tablespoons of water
1 tsp. salt
3 1/2 cups bread flour
1/2 tsp. instant yeast
Mix this together and knead until you have a smooth dough. Cover and allow to double in bulk.
Pace the dough on a lightly floured surface and roll it out into a large thin rectangle. Brush with melted butter and sprinkle with grated Gruyere cheese. I think these would be excellent with cheddar too. Roll this into a log.
Cover and allow to rise for about 30 minutes.
Slice into about 1 1/4 inch slices.
Sit them on a parchment lined cookie sheet and spread open to expose the cheese a bit. Lightly brush with melted butter.
You can see that I got 14 slices from this recipe. Bake in a preheated 425 degree oven for 20-25 minutes until golden.
Oh yum!!!
What is not to like about these?
The dough is a bit like sourdough, crusty on the outside and chewy on the inside. They are not nearly as sour as sourdough though.
Again, I can imagine these stuffed with all sorts of combinations. These are going to compete with the rosemary bread for how often they are made.
