This is my families favorite salad. I especially like to make it at this time of year because it has all of the Fall colors. And, OMG, what a killer salad it is.
I start by slicing red, orange and yellow bell peppers into strips.
I add lots of fresh spinach and bean sprouts.
I chop up a head of Napa cabbage and add it to the mix.
Then I add tons of fresh cilantro. We are big fans of cilantro around here.
I thinly slice a head of red cabbage.
In a separate bowl I squeeze the juice of 2 limes.
Then add 8 tablespoons of olive oil and 3 tablespoons of sesame oil. Do not skip the sesame oil because the flavor is essential to this dish.
Next, I add 5 tablespoons of soy sauce and 1/3 cup of brown sugar.
I finely dice about 5 tablespoons of fresh ginger.
Oops....I have a few pics out of place here. Back to the salad for a second. I add a pound of boiled linguine to all of the veggies. Rinse it with cold water so it doesn't wilt the vegetables.
To finish the dressing, I add 3 cloves of diced fresh garlic. Whisk the dressing to combine and pour it over the noodles and veggies and toss it all together using your hands. It's really the only way to mix salads!
Not only is this healthy but it is hard to stop eating! If you make this once it will become one of your favorites too.

i have to try this at Home...
pumpkins are kind of a bust here this year cause we never had any hot weather this summer...they had a few...but they aren't officially open yet...still setting up.
but we had fun...it felt like Fall...
