No Knead Rye Bread Recipe

If you are a fan of my no knead rosemary bread recipe then here is another one to add to your repertoire! I was thinking that there should be no reason that rye bread could not be made the same way as the rosemary bread and I was right. Isn't this a gorgeous loaf of bread?


Here is the recipe:

1 1/2 c. rye flour

4 to 4 1/2 c. all purpose flour.

3 tsp. salt

1 tsp. instant rise yeast

3 T. caraway seeds (optional)

3 c. water

Throw this all together in a large bowl and mix until you have a sticky dough.
Cover with plastic wrap and sit it aside to rise for 24 hours.


This is the container I use to bake all of my no knead bread. I bought it on ebay. If you want to search for one just hunt for covered pottery bowl.


It has to have an open lip so the bread does not get trapped inside.


After 24 hours your dough will look like this.


Preheat your oven to 450 degrees with the empty bowl and lid inside. When the oven is ready, carefully remove the bowl and spray it with cooking spray. Be careful not to burn yourself.


Dump the dough into the hot bowl then immediately cover it with the lid and place it in the oven. Bake it for 40 minutes.


Then remove the cover from the bowl.


And roll the bread out onto the rack. I use a pizza stone for all of my bread baking. Continue to bake it outside of the bowl for an additional 40 minutes.


This recipe makes a very dense chewy rye with a crispy crust. I wrap it in plastic and keep it in the refrigerator. It makes excellent toast too.

Fine, just keep feeding my addiction. I watched two loaves of of the original recipe wiped out in a matter of 15 minutes yesterday at my brothers house.

As we speak I have a loaf working that I have used sun-dried tomatoes and garlic in. There is nothing you can not do with this recipe.

One of the loaves yesterday I used, parsley, sage, rosemary and thyme. People were going crazy over this bread.

I'm on my way to E-bay to get two pottery bowls. Thanks for the info.

The Rye bread is a definite for me. Will try it soon.

Our Sunday dinner was a huge success. I made a single recipe of the Cranberry Orange cake it was divine. There is not much left. We hurt ourselves. The Rosemary bread was so aromatic we ate it slathered in butter while hot!

I love the Mar Creast daisy and dot stoneware bowl you used. I was lucky enough to get a large number of them from my Grams and now with your rye recipe in hand I will be making some lovely rye bread. Thanks again for another wonderful recipe.

I may just give this a try although my history with bread that all my bread has turned into door stops and has been known to break teeth. Maybe this one might work for me. Hugs and sparkles - WG

Stunning loaf of bread..looks just perfect.

I bake my breads in a clay baker but I like the round bean pot shape. Might try that next time!
I have a bean pot like what you do your bread in.
I haven't made bread in ages. Maybe when I retire or my hours get cut back.
I'll copy and save the recipe.

Oh, I wanted to ask you a question about this and saw our dear Bev at the top of the comments. How I miss her and her posts. Oh dear. Okay, back to my question. How could I raise the fiber content of this? I am trying to follow The Zone as I lost a lot of weight on it before but bread is a no-no unless it has enough fiber to bring down the carb count. Thank you.
