When I was a little girl my best friends grandmother made these cookies and they were one of my favorite treats. I had a lot of oranges and could not decide what to do with them and then these came to mind.
2/3 cup shortening
2/3 cup butter, softened
1 1/2 cup sugar
2 egg
1 cup fresh orange juice
4 T. grated orange rind
4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
The Frosting:
4 cups sifted confectioner's sugar
4 T. butter, softened
2 T. grated orange rind
4 T. orange juice
Heat oven to 350 ºF. Mix shortening, butter, sugar and egg. Beat in orange juice and rind. Blend dry ingredients together. Beat into mixture. Use a tablespoon cookie scoop and drop on parchment lined cookie sheets. Bake 10 minutes. They should just begin to brown on the bottoms.
Frosting: Combine butter and sugar. Mix. Add orange rind and juice. Beat until smooth. Frost cookies when cool and let rest on cookie racks until the icing is set.

Frosting on cookies and cakes are really rare over here and I wonder why, it does make the cookie look even more delicious :-)

Is there something else I can use instead of shortening? I can't seem to find it here at all and am hoping there is something else. Perhaps margarine and butter combined?
