I found a wonderful new blog recently: seasonalcookinturkey She showed a recipe for a typical Turkish breakfast that was so enticing. I needed to make it immediately but did not have Turkish ingredients on hand. I substituted with the following. This is a great way to use the harvest from your summer garden.
I was out of fresh tomatoes so I used my oven roasted ones and they were wonderful. Cube as many fresh tomatoes as you wish. Halve and seed some cucumbers. Cut them into 1/4 inch half moons. Crush some dried thyme between your fingers and sprinkle it over the cucumbers. Do the same with dried oregano. I used about 2 tablespoons of each. Sprinkle with some sea salt and cracked black pepper. Add about 1/4 teaspoon of red pepper flakes. Add about 1 teaspoon of balsamic vinegar. Drizzle with 3-4 tablespoons of olive oil. I used the oil from my oven roasted tomatoes which added lots of flavor.
Cube some fresh mozzarella and add about 1/3 cup of crumbled feta cheese. Add a large bunch of diced fresh basil. Add some finely sliced green onions. Mix this all together and set aside to rest at room temperature for about an hour. Stir from time to time throughout the hour.
Serve it with a plate of assorted meats. All I had on hand was salami but it was very good. Next time I will add some prosciutto. I only had kalamata olives which worked nicely but yesterday I bought Turkish olives will be better the next time I make this.
I served it with homemade naan but I will be experimenting with Turkish bread next week. I also served it with my pickle pot which was a great addition. Very simple and healthy.
