Joy's Balinese Chicken Noodle Soup

I love following Joy at: http://myturkishjoys.blogspot.com . What an exciting life she lives! And she has great recipes. She posted this one for Balinese chicken noodle soup and I just had to make it. It is fantastic. You can make it as spicy or mild as you like.

You need some hot peppers. I used jalapenos because I did not want my soup to be too spicy. You need turmeric, shallots, lemon grass, cilantro, Thai basil, garlic, green onions, brown sugar and fresh ginger.

Place 1/2 cup of garlic in the bowl of your food processor, add 3 tablespoons of brown sugar, 2-3 hot peppers, 2 inch piece of peeled ginger, 2 teaspoons of turmeric, 4 tablespoons of blanched almonds, and 2-3 pieces of lemon grass. Pulse until it turns into a rough puree'.

Joy uses galangal but I was unable to find it. If you can get your hands on some, add about 3 tablespoons of it.

Add 1/2 cup of the spice mix to a few teaspoons of oil in a heavy frying pan. Cook over medium heat for about 45 minutes until it turns golden.

This is what it looks like when it is ready.

Store the extra in a jar in your refrigerator.

Add the 1/2 cup of spice to a bit of oil and cook until it releases it's aroma. Add 1 pound of thinly sliced raw chicken meat and saute' for a few minutes. Add a few julienned carrots and 5-6 cups of chicken stock. Add some salt and pepper to taste. Bring to a simmer and cook until the carrots are tender.

Ladle the soup over some al dente noodles, I used Asian noodles. Add fresh bean sprouts. Top with cilantro, Thai basil and green onions. Serve with a lime wedge to squeeze over it just before eating. This is killer good!

And stop by Joy's blog when you have a chance!

As usual, any visit here is a fun one. This recipe is so unusual that I must try it. Your chairs are stunning. But, I am fascinated in the reflection that I see in the bottom glass panel of the door. xo

Sounds scrumptious. Never heard of galangal. After reading about it. I would give it a try. Thanks for the links and the recipe. Take care.
The soup looks amazing. My nephew would love this. I can crank-up the heat. I also love Joy's blog and her food.

Love your chairs!

I can't decide which to drool over more... the soup or the chairs... I'll have to settle for some massive drooling over both, for very different reasons (I have no desire to sit in the soup or eat the chairs...)

Anywho. Perhaps I've been up far too long without enough caffeine.

I can't wait to try this recipe, but I'm going to have to add it to my stash that I'll be able to haul out once I've gotten a food processor again. Hope you're staying warm!

XOXO

I've never been a chicken noodle soup fan, but I may change my mind now. I love cilantro & turmeric! Bookmarking this - it would be a good soup for the next time I get hit with a cold. I'd make it extra spicy!

Thanks so much for sharing! I'm happy to hear you enjoyed the soup as much as we did. Excellent! I was able to sneak back some fresh galangal and some other ingredients on our recent trip to Bali. Stay tuned for more yummy recipes.

Thanks again!
