Shrimp Scampi Carbonara with Creamed Spinach and Mushrooms

Along with all of the cooking I have been doing for my daughter's upcoming events, I still have to whip up food for my husband and The Blog Tech. I made them one of their favorites the other day.....Linguine Carbonara.


Fry some bacon. Leave a few tablespoons of grease in the pan.


You need 4 egg yolks, some chopped fresh herbs of choice, Parmesan cheese and a couple pounds of linguine. And a stick of butter.


Place the egg yolks and butter in a bowl.


Add the herbs.


Saute' a large bag of spinach and some sliced mushrooms in the reserved bacon grease. Add cracked pepper and salt and a few tablespoons of cream. Remove this from the pan and set aside. Saute a pound of shrimp in the pan adding several cloves of chopped garlic, a bit of butter, salt, pepper and paprika.

Boil the linguine in salted water and drain but save about 2 cups of the pasta water. Dump the linguine in the bowl with the butter and yolks and toss it around until it is all combined and the noodles are coated. Throw in 2 cups of Parmesan cheese and continue to toss. Add pasta water to get a smooth creamy consistency. Dice the bacon and add it next.


Top the pasta with some of the creamed mushrooms and spinach. Place some of the shrimp on the top.


A quick, easy and tasty meal!

With all you've been preparing for your daughter I would think you might be all cooked out, you really have a gift you do.
