These are the best cookies!
I like to double this recipe. It gives me about 40 cookies.
For the single recipe, put 1/2 cup of butter in your mixer bowl.
Add 1/2 cup of sugar.
Add 1 egg.
Beat in 1 tsp. of baking powder and 1 tsp. of vanilla extract. Beat until fluffy.
Gradually beat in 2 cups of flour.
Check out my spatula! I am a biker baker.
Roll the dough to 1/8th inch thickness. Cut out 2 inch round circles.
Heat a jar of raspberry jam and stir until it is smooth. Set aside to cool.
Find a helper to cut candied red cherries in half and green cherries into slivers. The Blog Tech does not have a swollen cheek. That is a cookie in there. He works for cookies.
Bake the rounds at 350 degrees for 10 minutes. Once they cool, spread them with raspberry jam and sandwich two of them together. Spread confectioners sugar glaze on them and decorate with the candied cherries as you can see in the first photos.
Good job Blog Tech!!!
