Zapiekanka.....Polish Pizza

If you have never heard of these before, this just might become one of your new favorite things!

Teddy's eyes are healing.

This is the first street food that was sold after the fall of Communism in Poland. Zapiekanka.

This Polish pizza almost always has mushrooms for it's base.

Start by sauteing some diced onions and shallots (if you have them).

Slice up a bunch of assorted mushrooms.

Cut a baguette in half and scoop out a bit of the soft part. I like using a softer baguette. The hard ones make it difficult to bite and chew. Butter the edges so they won't burn.

You will need some good ham and salami. I used an Italian rosemary ham.

Get out some paprika and pizza or Italian seasoning. Or you can use oregano.

Add some salt and pepper to the sauteing onions.

Add the mushrooms to the pan.

Saute' until the mushrooms are golden. De glaze the pan with a bit of wine.

Divide the mushroom mixture and spread it over each baguette side. Sprinkle it with some freshly diced parsley. Add the ham and the salami.

Sprinkle on some green peppers if you like. Top with cheese. I used mozzarella , a bit of provolone and some Polish Morski cheese.

Sprinkle paprika and pizza seasoning and some granulated garlic over the cheese. Bake in a preheated 400 degree oven for about 20 minutes.

Sprinkle with parsley and green onions.

They are eaten whole in Poland but I cut mine into smaller pieces.

Kids love these.

And though strange by American standards, the Poles eat them topped with ketchup and mayonnaise. I have found that people eat their pizza topped with ketchup all over Eastern Europe. Try it, you might like it! I used curry wurst ketchup!

I actually did something similar once, not knowing it was called a Polish pizza. In a way it is a mix of pizza and raclette.

What a great idea for Christmas Eve. That's when we all get together and have special sandwiches etc. before opening gifts. These would be absolutely perfect and I think I would have to cut mine up, as well. Yummy!
