Southern Smothered Beans

I made these for New Years Day. If you have never had smothered green beans, you really should try these. This is some serious comfort food!


Fry a few strips of diced bacon sliced up until the begin to crisp but are still soft.


They should look like this.


Add 1 large diced onion to the bacon in the pot.


Add 4 large potatoes cut into large chunks.


Then add a couple pounds of fresh green beans with the ends snapped off and cut them in half.


Add several tablespoons of cracked black pepper and a teaspoon of salt. Taste later and add more seasoning if necessary. These should have a peppery flavor so make sure to use enough black pepper.

Add 4 cups of water.


Bring this to a boil then cover it and simmer until the potatoes are soft enough to mash. About 45 minutes.


Remove most of the potatoes to a separate bowl and mash them. They can be lumpy. Add the potatoes back to the pot. Taste for seasoning and adjust if necessary.


A big pot of yum!

Looks like we both have the same taste in soups, perfect and i could eat this right now as i type this comment. I'm a big soup guy and i couldn't pick a better time to make soup than right now in winter. We like our chicken corn soup over in our Amish community. Richard

Oh,my. This is what the Goatmother grew up on (only with little new potatoes out of the garden) and the very best way to make fresh green beans. Yum. And how are Teddy's eyes, by the way???

Oh Yes!!! Although I grew up in Michigan,some of my fondest kitchen memories were of my Mom's southern family dinners, when my Grammie, or one of my Great Aunts would cook the green beans just this way. . this was one of those dishes where the little crock of saved bacon grease would be opened, adding a little to saute the onions a bit. I can hear the gasps of the healthy eaters, now!! Maybe not the healthiest route, but they sure tasted good! Major comfort food, especially in the Fall & Winter. Thanks for the memory jog!

This sounds absolutely scrumptious! Our customary New Year's Day meal is black-eye peas! I have to leave out the meat, however, as we have a vegetarian in our midst.:-) Wonderful recipes here!
