If you like a good buttery shortbread, you will love these. This is a very easy recipe!
Place 1 cup of butter and 1 cup of sugar in your mixer bowl. Beat with the whisk attachment until blended. Add 2 cups of flour and beat until you have a crumbly mix. Add 1/2 cup of chopped salted cashews. Press this mixture into a 10 X 13 inch parchment lined pan.
Sprinkle 1/2 cup of cashews over the top.
Cover with waxed paper and gently press the cashews into the dough.
Remove the waxed paper and bake in a 375 degree oven for 25 minutes.
Remove and let cool for 5 minutes.
Cut the shortbread into squares and leave them in the pan to cool completely.
My husband and The Blog Tech almost polished these off in one sitting.

My beets are darker than that. I hope I didn't do something wrong. They taste wonderful so I don't care what color they are.
