Easy Jam

If you think you can't make jam, you are wrong. It could not be simpler. And you can make very small amounts in no time at all.

Slice some strawberries. I like big chunks so I quarter them. Dice them smaller if you like more of a puree. Put them in a heavy pot.

Sprinkle in the zest of one lemon.

Sprinkle 1/4 cup of sugar over the berries. I used about a quart of berries.

Place the pot over a low heat and cover.

Stir occasionally and be careful to not let it boil over. Once it reaches the above stage, let it simmer for a while until it begins to thicken. It will thicken more as it cools. Ladle it into jars and seal tight with the lid. Sometimes these seal themselves. I make this in small quantities so I never bother to "put it up". This keeps for weeks in the refrigerator.

I made blackberry jam too.

Add lime zest to the blackberries.

I still only use 1/4 cup of sugar to a quart of blackberries and it is plenty sweet enough.

This is what happens when you don't pay attention and let it boil over.

I get about 2 and 1/4 cups from a quart of berries. This is some of the best jam you will ever eat. This is wonderful served on the angel biscuits from yesterday.

Oh, thank you! So easy without all the work. Can you use frozen berries as well to do this? I love the fact there is just a little sugar, too, as there's a diabetic in the house.

Thanks for the recipe. Is there a way to buy zest? We never buy or use limes, and only buy lemons once in a blue moon.
Sure do appreciate you sharing your knowledge with us!

This would really go over well here! I have made scads and scads of jam in the past, but our eating habits have altered somewhat, and we rarely eat it now. We still have lots of blackberries from last season in the freezer. I think they would work fine. Thank you so much for the idea!

My goodness my mom used to spend hours making blackberry jam when I was a kid. By contrast your recipe is so simple. LOVE it. PS) TEDDY go get your hair cut and styled, sweetie. I hear you're being difficult.
I made the angel biscuits this morning. Fabulous! But I didn't have the blackberry jam made. Now I have blackberry jam and no biscuits. Am I ever going to get this all together.
It's not that I CAN'T make jam -- it's that I SHOULDN'T. Nom nom nom, if you get my drift.
