Lit'l Smokies

These are great appetizers for a special occasion. Make sure to prepare a lot of them. They disappear fast.

Cut bacon into thirds. Wrap each Smokie in a piece of bacon and place seam side down in a pan.


Melt a stick of butter and mix it with 1 cup of dark brown sugar.


Spread this mixture over the Smokies. Sprinkle an additional 1 cup of brown sugar over the top.


Bake at 375 degrees for 20 minutes. Turn the oven up to 400 degrees and bake 15 minutes longer until the bacon is crispy. I made these for my daughter's birthday party and they were gone in minutes.

How do you keep them from swimming in grease? I'm making them for the first time, and when I took them out of the oven at 10 minutes to roll them around, the pan was full of grease! They didn't look too appetizing then. Oops! There goes my timer. I guess we'll see. For sure I got one question answered I have asked before: by looking at these there's no way to cook the night before a party and reheat!

i use thin sliced bacon so you get way less grease! you can make them a day ahead and reheat them and then you can scrape the grease off when they are cold.

I used one package of little smokies, which filled a 9 x 13 pan. To cut back on grease, I used thin sliced bacon and I halved the butter and halved the brown sugar. After baking, I removed them from the pan to get them out of the grease. I re-heated them, and they were delicious!

I made these, but while the bacon looked done, it wasn't quite crisp enough, making it easy to kind of choke on the bacon. any suggestions? I wondered about partially cooking the bacon first?

use thin bacon and cut it in pieces. stretch the bacon to thin it out even more when wrapping it tightly around the sausages.
