It was a cold snowy day yesterday so I made The Blog Tech some mac and cheese.
Melt 1/4 cup of butter in a heavy pot. Add 1/4 cup of flour and cook it for a few minutes to cook away the floury taste. Slowly pour in 2 1/2 cups of milk. Add salt and pepper to taste.
Add 2 1/2 cups of cheese. I used cheddar. You can add whatever you like.
For added flavor, I pureed some of my oven roasted tomatoes and Turkish roasted peppers. This was about 3/4 cup of puree. Cook over low heat until the cheese is melted and everything is blended together.
Top with some sliced smoked sausage. I used Lit'l Smokies. Bake at 350 degrees for 30 minutes.
This is also good with breakfast links.
