Pumpkin Pecan Streusel Muffins with Maple Glaze

It seems I am baking something containing pumpkin almost every day.  I guess Fall is truly here.  I don't like muffins and rarely make them but I knew my gang would like these so I made them yesterday morning.

Mix 1-1/2 cup flour with 1 tsp. baking soda, 1/4 tsp. nutmeg, 1/4 tsp. cinnamon, 1/4 tsp. ground cloves, 1/4 tsp. salt and 1/4 tsp. ground ginger.  Whisk this all together.

In your mixer bowl, mix 1/2 cup melted butter with 1-1/4 cup of sugar.  Beat in 2 large eggs and 1   15 oz. can of pumpkin puree.  Add 1/4 cup of water.  Gently stir in dry ingredients just until blended.


Line your cupcake pans with paper liners.

Fill the cups 3/4 full.  In a separate bowl mix:  1/4 cup brown sugar, 1/4 cup butter cut in small pieces, 1/2 tsp. cinnamon and 1/4 cup ground pecans.  Sprinkle this mixture evenly over the batter in each cup.  Bake at 350 degrees for about 20 minutes.

Mix a couple teaspoons of maple syrup with some confectioners sugar to make a glaze and drizzle it over the top of the muffins.  These make your house smell wonderful.

This is something I can't do since we have very few pumpkins here and those they do sell cost a small fortune :-) :-) I actually don't know how a pumpkin tastes :-)

Never met a muffin I didn't love. I'm going to try making these with cushaw puree.
Mmm, I can only imagine how wonderful your home smelled! I love pumpkin anything, and I'll bet these were delicious!

I have been in a mood for pumpkin something. I think this recipe will do just great.
I'm with Christer!! This is something I can do and I have it all in my cupboard! I buy pecans by the BIG bags. I need to use a bit of those up...and..I can give these to my kids!

I can't imagine not liking muffins.
Not liking lima beans - yes, I can imagine.
Not liking brussel sprouts - I can also imagine this.
But not liking muffins - it must require a recessive gene mutation. The fact that you would bake something that you do not like, but others do, shows what a generous & thoughtful person you are.

I have made these twice in the past two weeks. They are delicious!
I'm on a low sugar diet so I use half of the sugars and no glaze and let me tell you they are still totally yummy!
