This almost did not happen. I was not planning on making Easter dinner for the shelter. They get hams donated and they prepare Easter dinner for all the homeless and the elderly in the area. They have tons of volunteers and they do this all on Good Friday. I assumed it was all taken care of. However, The Blog Tech was volunteering that day and he texted me telling me that all the guys were asking what I was making and when I would be bringing it. Then I made my mom's Easter rolls. She always made these for us at Easter when we were kids. First you make the dough:
1 cup milk
1/4 cup sugar
1 tsp. salt
2-1/4 tsp. rapid rise yeast
1/2 cup shortening
1 egg
3-1/2 to 3-3/4 cups flour
1 cup finely chopped walnuts
Mix this all together until you have a smooth dough. Cover and let rise until doubled. Roll this out into a large rectangle.
Brush it with melted butter and sprinkle it with chopped walnuts. Roll the nuts in using a rolling pin.
Fold the dough into thirds.
Slice a 1/2 inch strip. Twist them from end to end.
Place them on racks to cool and drizzle them with confectioners sugar icing. These are some of the tastiest breakfast rolls ever.
We packed everything up and delivered it to the shelter for Saturday's dinner. My daughter leaves today to start her new job tomorrow. My son is going to dinner at his girlfriend's parents. I am sick of cooking Easter food so we are going out to eat Korean tonight!
