I made a fresh fruit salad for the shelter yesterday. I peeled and diced for hours.
The shelter rarely sees fresh fruit. When they do get some, it is in such bad shape that they often have to throw it out.
I used pineapples, kiwis, blueberries, cantaloupes, mango, papayas, oranges and bananas.
The dressing is made with lime juice, fresh mint, orange juice and honey whisked together in a blender.

Jaz, you are helping to keep the people at the shelter healthy and I am sure that your delicious meals keep-up their spirits, too.
I'm going to the super market tomorrow and I'll buy lots of fruit and ice cream :-) I made it from canned fruit the other week but that's really not the same!

The dressing...I have got to make some of that dressing. :)
I have some fresh mint from my farmshare (plus tons growing in pots in my front yard). Now I have something to do with it besides drying it for tea! Thank you!
