Homemade Maple Granola

This time of year I like to make granola.  It just seems like a Fall breakfast food to me.  Each time I make it, I change the recipe depending on what I have on hand.
I make a lot of this at one time because it keeps very well in a zip lock baggy.  I start out with a large container of oatmeal, 3 cups of pepita's, 3 cups of soy nuts, 3 cups of sunflower seeds, 3 cups of slivered almonds  and 2 cups of ground walnuts.

Then I added 1-1/2 cups of brown sugar.

 And 1 bag of coconut.

Then 1 cup of vegetable oil and 1 cup of honey.

Finally add 1-1/2 cups of maple syrup, 2 tsp. of cinnamon and 1 tsp. of nutmeg.

Stir all of this together thoroughly.

Scoop it up and pour it out on foil covered cookie sheets which you've sprayed with cooking spray.

This made 4 large trays or about 32 cups.  Bake this at 300 degrees for 1-1/2 hours stirring occasionally so it browns evenly.  Remove from the oven and let it cool.

Put it back into bowls and add dried fruits.

I added raisins, dried cherries, dried cranberries, dried apricots, dried blueberries and dried strawberries.  I put this in a glass jar and leave it on the kitchen counter so everyone can help themselves. I keep the extras in ziplock bags.

Yes granola is autumn breakfast food and I love it. Never made it myself though, perhaps it's time to? I wonder if I can find dried cherries here, the rest I know I can find :-)

Have a great day!
Christer.

we love it too. I started making this very same granola back in 1980, its a winner in this family and I kept my kids supplied for years, its been a little while since I made it and you have sparked my attention, I put wheat germ in ours and I use part butter, with the oil, our family puts it on apple sauce, icecream, pudding, pancakes, and I even add it to cookie and crisp recipes, it takes a bit of work but is so worth it.I try to keep the hard nuts out of it now, I chop the nuts smaller now, we have some pretty pricey root canals Garry and i, no sense tempting fate!I bet your kitchen smelled heavenly with this cooking, my daughter makes granola bars from this as well,

We call it muesli here - we make our own too a lot nicer and cheaper than shop brought.

Looks absolutely delicious and as soon as I collect the supplies I'm going to give this recipe a try, I can almost taste it with some good yogurt and honey already!

WOW that is some scrumptious granola you made. Mine is usually store bought and boring.
We love granola! This recipe is going to my daughter who keeps us in granola! I think she will love this one. Thanks again, Joyce!

I have never made granola either... I could cut this recipe in half and make enough for my husband and me, and it looks very tasty!
