Saute some diced garlic, thinly sliced fennel, diced onion and some hot sausage in olive oil.
Add a couple anchovies.
Sprinkle some Italian spices over it all.
I had some leftover beans and greens so I added it to the sauce.
Taste it and adjust the seasoning. Break eggs into a small bowl and one by one, add them to the sauce (forgot the pic of this). Cover the pan with a lid and cook until the eggs are poached to your liking.
I topped the toast with Provolone cheese and stuck it under the broiler until it melted.
Scoop an egg out and place it on the toast.
Top it with more sauce and sprinkle it with Parmesan. Thanks twomenandalittlefarm for a great recipe!

Come to think of it I have never poached an egg myself, eaten lots of poached eggs but never done it myself :-) Perhaps I shoud try that instead of boiling them like I always do.
