Everyone had a case of the sniffles around here the other day so I whipped up a batch of this soup. I'm not sure that it cured their colds but it sure made them feel better. And the colds do happen to be gone. |
I boiled a chicken with some onions, carrots, celery, peppercorns and bay leaves in a pot of water. After about 2 hours I strained the stock from the solids.
I added some Parmesan rinds to the stock and cooked for another hour. I tasted it and adjusted the seasoning and removed what was left of the rinds.
I brought the stock to a boil and added some ditalini pasta.

Cook just until the pasta is al dente and add some diced fresh dill. |
Top with a bit of shaved Asiago cheese. This is a very rich chicken soup and perfect for the type of weather we are having.

This looks perfect for the weather we're having now, cold and snowy and I think I would love it even if I for once don't have a cold :-)
