Lasagna Soup

If you love lasagna but don't want to take the time to make it, this is the next best thing.  This was a huge hit with my family.
Brown 1 pound of Italian sausage in a bit of olive oil.

Add 1 diced onion and 4 diced garlic cloves.  Cook this while breaking up the sausage.

Sprinkle in some S&P, 1 tsp, oregano and some hot pepper flakes to taste.

Add 1 28 oz. can of crushed tomatoes, 4 C. beef broth, 2 bay leaves and 1 small can of tomato paste.

Bring to a boil then turn it to a high simmer and let it cook until it thickens a bit.

Add 1 pound of the pasta of your choice, I used elbow macaroni.  Cook just until the pasta is al dente.

Serve topped with a scoop of ricotta mixed with some Parmesan cheese and some fresh basil.  This is really good served with garlic bread for dipping.

Original concept. At first glace I thought the cheese on it really looked like ice cream.

That has to be good. My daughter won't eat lasagna even though my wife makes some of the best that I have eaten, maybe she would like this as she eats pizza and that sort of thing.

I can definitely see me having this now when it's cold and snowy outside.

Have a great day!

What a clever thing. Did you invent it? Looks delicious.
You will forever remain a mystery to me. Simply fascinates me the way you cook. I talk about you a lot to my girls. Looks delicious and sounds delicious. Nearly everything you make is doable. :)
The reason I said "nearly" is because now and then an ingredient is something I never heard of, but that's rare!!
