Recipe:
1 C. boiling water
1 C. chopped dates
1 tsp. baking soda
1/4 C. softened butter
1 C. sugar
1 egg beaten
1 tsp. vanilla extract
1/2 C. chopped walnuts
1-1/2 C. all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
Pour the water over the chopped dates and set aside to cool. Cream the sugar and butter, add the egg and vanilla. Mix the dry ingredients together and add alternately with the dates and water. Pour into a greased 8 X 8 inch pan. Bake at 350 degrees for about an hour or until a toothpick stuck in the middle comes out clean.
Topped with the coconut icing.
Icing:
10 T. dark brown sugar
6 T. butter
4 T. cream
1 C. coconut
Bring to a boil and cook for 3 minutes. Pour over the warm cake.
