The Best Chicken Pot Pie

Do you like chicken pot pie?  Not me!  I could never stand the looks of them. My husband, on the other hand, was raised on those little frozen hockey pucks and has fond memories of them.  To satisfy his memories of dear old mom's cooking, I made him one from scratch.  To my surprise, The Blog Tech is now a huge pot pie fan.  I have to admit, these homemade pot pies are killer. Plus you can control what you throw into them.  Probably to my husbands dismay, there were no peas.  Too bad, so sad!

 I made a savory cheddar/rosemary crust.  Just use your favorite pie crust recipe, leave out any sweetener and add some cheese and herbs.

 I roast chickens for Teddy all the time and I freeze the dark meat.  I used some in this recipe.

 I also added some fresh corn I had cut off the cob.

 Oops.....I almost forgot to show the filled pie.  Let the filling cool a bit before filling the crust.

 Crimp the edges.

 Brush with butter and cut some vents.  Bake it at 350 degrees for about an hour or until the crust is golden and the filling is bubbling.

My guys couldn't wait for it to cool all the way so this piece looks a bit runny.  The smell makes this recipe worth making.  My guys rarely eat leftovers and they are still asking me to warm up pieces of this pie.

It must be a husband thing...I hate frozen pot pie, he loves. I think it is the square chicken pieces and not knowing what part of the chicken they come from....Freaky

There is no comparison! Homemade chicken pie is a delicacy, in my opinion. No resemblance at all to those frozen things!

My mother's birthday is in October and we used to have chicken pie then, not unlike this one. I'd eat some these days.

I hate chicken pot pies too! I think it is the look of what is inside them. That grayish-white gravy and everything all together reminds me of--well I rater not say it here! Lol

About your little add-on post about Teddy, I belong to a Facebook group of doTerra essential oil users for dogs, and I posted your comments. The lady who runs the page replied: "Has this dog been tested for Lymes - symptoms fit. Have your vet run a SNAP-4Dx blood test (the most accurate test for symptomatic dogs). This test actually detects multiple vector-borne diseases, not just Lyme disease, so it can be useful to rule in or rule out certain other types of bacteria and parasites as well. Also: Immune-mediated diseases should be considered as a possible cause of these symptoms, and an X-ray of the painful joints will allow your doctor to examine the bones for damage or disorder. However, I highly suspect Lymes and encourage immediate treatment assuming that it is the cause - if after 3 weeks of treatment there is no improvement, then probably isn't Lyme. Note: The longer you take to treat Lyme, the poorer the outcome. Please see my file: Lyme Disease in Dogs. You can use the protocol with drugs and I know of people who have used the protocol without and had great results. However, work with your veterinarian.
