This is a great way to use your leftover Thanksgiving turkey. Turn it into turkey bone gumbo. The day after Thanksgiving, I made turkey stock using the carcass. |
In a heavy pot heat 2 cups of oil and add 2 cups of flour to it.
I used duck fat for extra flavor.
Mix the oil and flour together. You are making a roux.
Keep whisking this over medium high heat. You want to cook this until it is the color of dark brown sugar. Don't let it burn.
This is the color it should be. Dump in all of your vegetables and stir to coat. Add some Cajun seasoning to taste.
Add sliced kielbasa and andouille sausage.
Add 6 to 8 cups of turkey stock. Add 2 bay leaves and some salt and pepper to taste.
Stir in some cubed turkey and a bit of hot sauce depending on how spicy you like your gumbo.
Just before serving, stir in some fresh diced parsley.
Serve it with a big scoop of rice sprinkled with green onions.
