I guess it was bound to happen; I am cooking daily for my workers. I don't know that it makes them work better but it sure does make them smile. I made this apple fritter bread for them the other day. |
In the bowl of your mixer, beat 2/3 C. of sugar with 1/2 C. of softened butter. Beat in 2 eggs and 1-1/2 tsp. of vanilla. Whisk 1-1/2 C. of flour with 1-3/4 tsp. of baking powder. Mix this into the wet mixture using the paddle attachment for your mixer. Slowly mix in 1/2 C. of milk and mix in 2 peeled and diced apples. Pour half of the batter into a greased and parchment lined loaf pan.
Mix 1/3 C. of light brown sugar with 1 tsp. of cinnamon. Sprinkle half of it on top of the batter in the pan.
Top it with the remaining batter.
Sprinkle the rest of the cinnamon sugar on the top.
Run a knife through the top to swirl the cinnamon sugar into the batter. Bake it at 350 degrees for about an hour. Check it with a toothpick to see if it is done.
Mix 1/2 C. of confectioners sugar with about 2 T. of milk to make a glaze and drizzle it over the loaf. Place it on a rack to cool.
