The Blog Tech and his sweetie took some pate' that I made to her mom's house over the weekend. This is a good country pate' recipe. |
Start by sauteing a diced onion with a few diced garlic cloves, salt and pepper and some dried thyme in a couple tablespoons of butter. Let this mixture cool. |
Line a pate' pan or a loaf pan with 3 bay leaves and some good smokey bacon.
Pack the meat mixture into the pan.
Cover with bacon. Place the lid on the pan and place it in a large pan and fill it halfway with water. bake it at 325 degrees for about an hour.
The internal temperature should be 170 degrees. Remove the lid and drain some of the liquid. Place some weights on top of the pate' and press it in the refrigerator overnight. I put a heavy pot on top of a cutting board to press it.
Remove it from the pan.
Wrap it tightly in plastic wrap.
And be careful where you sit it just before serving. The family dog, which happens to be a blood hound, bolted through the door and ran in and took a bite, Saran wrap and all. I am still laughing about this. I've been laughing for days. I guess she found the smell irresistible.
