Taquitos

Yesterday I made the after school kids Mexican food for the first time.  Most of these kids have had a few lame tacos and nachos up until now but that is the extent of it.  They had never even heard of taquitos but they sure know what they are now.
 I mix lots of diced roasted chicken, 1 8 oz. cream cheese, 1 diced poblano pepper, 2 cups grated mexican cheese, 2 tsp. granulated garlic and onion, 2 tsp. cumin, 2 tsp. chili powder, 3 T. lime juice and salt and pepper. Mix it thoroughly. This is for 1 recipe.  I made 5 recipes which made 60.

Place some of the mixture on a flour tortilla and wrap it tightly.  Place it seam side down on a cookie sheet.

Keep rolling until you use everything up.

If you aren't baking them immediately, cover them with plastic wrap and keep them in the fridge.
 Brush them with oil and bake them at 400 degrees for about 23 minutes.

 They should be crisp and golden brown.

The insides will be melted and crispy around the edges.  The kids liked these so much that they sat around and analyzed what was in them.  One girl said she always dreamed of having her first sushi for her 21st birthday but now all she wants is a plate of taquitos.

I made 8 quarts of salsa to go with them.

I have been wanting to make taquitos and your recipe looks really good and easy, too. Plus I know it has been kid tested, so it will be a winner for sure. Thanks so much for sharing this recipe!
I've never had one but I just like saying "taquito!"

I know you don't cook for the kids for the praise. I have commented over the years off and on, but after reading this I felt I needed to give you the praise that you deserve. You make such wonderful foods. My grandkids have had taquitos but they have been from the frozen food section at the grocery store. This seems so easy and this grandma is going to make them homemade! What I think is special with you is the fact EVERYTHING is homemade. You must love to cook and I applaud you for your efforts!

Love your recipes. I like this one especially. And your use of Chorizo in your taco meat. I've wanted to use it but couldn't think how, since my family doesn't like hot food as do I. So, now, I'll mix a little in with the ground chuck and look forward to that special flavor. Thanks so much.
I am going to make these..yep. They are also good dipped in guacamole. Some of your recipe's have become "go to" when I have the kids over. The chili is ALWAYS a hit! Deish!!
