Cooking for 30 kids a day causes me to constantly come up with new recipes. I made this soup for the after school kids tomorrow. I sure as shit hope that Trump doesn't cut the program for these kids. Not that I am funded to do this but for 3 hours every day after school these kids get help with homework and have a safe place to socialize. I just supply them with a hot meal. So fingers crossed that this program doesn't get canceled.
1 diced onion
2 diced celery stalks
2 diced carrots
4 cups cubed potatoes
1 pound Italian sausage
3 cups chicken stock
1 cup cream
1 cup grated cheddar cheese
salt, pepper and 1/2 tsp. of dried thyme
Saute' the onion, celery and carrots in a couple tablespoons of olive oil. Brown the sausage separately and set it aside. Add the chicken stock and the potatoes and bring to a low boil and cook until the potatoes are almost tender. Add the salt and pepper to taste and the thyme. Taste the broth and adjust the seasoning. Depending on your stock, you might want to add a bit of chicken bouillon. Add the sausage, 1 cup of heavy cream and 1 cup of grated cheddar cheese.

My aunt is also an amazing cook and has a heart bigger than Texas, so you share many qualities.
Some people just don't get it....politics has everything to do with everything we do. Like it or not, that is the way it is. Keeping one's head in the sand doesn't make it all go away.
