I made posole for the after school kids yesterday. My kids always loved this Mexican stew when we traveled there so I thought the after school kids might enjoy it too and they did. |
Saute diced onion and garlic in vegetable oil and add some Mexican oregano, cumin, salt and pepper.
I missed a few pics once again. I broiled a mix of sliced jalapenos, poblanos and tomatillas until they were blackened and then pureed them in a food processor.
They are added to the onions with chicken stock. I added some bouillon for added flavor.
I diced lots of cooked chicken and added with 2 large tins of rinsed hominy.
It's traditionally served with slivers of radish in it and often has cilantro in it too. I passed on adding those because I thought the kids might not like it. We did serve it with lime wedges and tortilla chips which the kids loved.
Everyone ate it except for one girl who ate it but picked out the hominy. She said she doesn't like beans and even though The Blog Tech told her they aren't beans, she still wouldn't eat it. All in all, another successful, educational meal.
