This is a new recipe I made yesterday. The only good thing I can say about our rotten hot and humid weather is that it is great for bread rising.
This puffed up in 20 minutes.
The recipe:
½ cup warm water
1 tsp sugar
2 Tbsp yeast
1 Tbsp olive oil
3 Tbsp. sugar
2 tsp salt
2 cups water
6 cups of flour, plus some for dusting
Mix the flour into the rest of the ingredients and knead until you have a smooth ball of dough. Cover and let it rise until doubled.
Punch down and then divide into 12 pieces for Hoagie Buns
Roll into rectangles and then roll into mini loaves and tuck ends under.
Put loaves on a parchment covered cookie sheet and let rise for 30 more minutes.
Bake at 350* until golden brown (about 30-35 minutes).
These freeze very well.
