I used frozen stock I made a while back.
And I made lots of tiny meatballs...this is just a fraction of them.
I made some chicken breasts and cubed them and added them too. Some people make it with out chicken and some make it with just chicken but I like to use both.
You can use spinach or escarole.
As I made it I realized The Blog Tech and his wife would want some too so I doubled the recipe. I pulled out the last of my frozen stock which is sad because it's the stock I made with the last chicken I roasted for Teddy. I wonder how many chickens I roasted for her in 12-1/2 years? At least one a week....that's a lot of chickens.
