Rosemary Skillet Bread and a Thrift Find


Here is a recipe for a new no knead bread I made.  If you are intimidated by bread baking, this recipe is for you.  It couldn't be easier.

 Ingredients
  • 2 1/4 tsp rapid rise yeast
  • 2 cups water
  • 1/2 T. salt
  • 4 1/3 cups all-purpose flour
  • olive oil
  • rosemary

Instructions

  1. Combine yeast and water in a large bowl.
  2. Using a wooden spoon, add in 1 cup of the flour and then the salt and mix until combined. Stir in the rest of the flour, one cup at a time, until completely incorporated. Add 2 T. minced fresh rosemary and stir to combine.
  3. Cover with plastic wrap and let rise for 1 hour.
  4.  Heat a cast iron skillet in the oven as you preheat it to 400 degrees (a 10" skillet works well). 
  5. Remove the hot skillet from the oven and drizzle some oil into it and gently dump the dough in.  Drizzle olive oil over the top and sprinkle with some flaked sea salt.
  6. Place the skillet back into the oven.  Remember, the skillet is hot, use a pot holder.
  7. Bake for 35-40 minutes until the top is golden.

 Not only is this bread easy to make, it's an easy cleanup too.  One bowl and one spoon.

 I think you can do all sorts of variations of this bread.  It would be wonderful if you add olives.

 Check this out!  The thrift goddess was smiling on me yesterday.  Literally 2 days ago, I was looking at this Nordic Ware pan because I want to make mini pumpkin cakes for Thanksgiving this year.  I decided against it when the cost was 45.00.  I just couldn't justify paying that much for a pan I won't use very often. I was a bit disappointed but I thought I would just make something else.

I walked into a thrift store yesterday and sitting right there on the shelf was the exact pan, brand new, never used, 5.99 plus 25 % off.  So, for a little over 4 bucks, I have my pan!  I seriously stood there for a couple minutes thinking that someone was playing a joke in me.  I should have gone directly to the casino.  It was my lucky day.

I have a Nordic pan for individual pineapple upside down(PUD) cakes that I found at a little shop that is now gone. It was a steal at $7. I really wish that little shop was still around because I would go by there almost every day at noon to buy wimsy cake and pie pans and utensils. It was a happy place to shop. I've been looking for little bundt cake pans for individual rum cakes. I found a pan for individual pumpkin cakes set of six like my PUD cake pan but it was like $15. I really wanted that cake pan but it was out of my budget. sigh

Oh my that pan is AWESOME!!! Great gift from the goddess!!! And your bread looks great, I need to find a cast iron pan one of these days!
