It's been a weird week to say the least. Being in quarantine means I can't cook for the masses. I can't remember ever having done this before. For St. Pat's Day, I made corned beef and cabbage and I have so much I don't know what to do with it. I made one loaf of Irish soda bread.
I've never made one loaf of soda bread before.
I am trying to make dishes using as many vegetables as possible; just a bit of healthy cooking. For breakfast on Thursday, I made a Korean cabbage pancake. You just shred some cabbage rather thin, toss it with some shredded carrots, onion and garlic and ginger. Mix 3/4 C. of water with 1 C. of flour, 1 egg and 1/2 tsp. salt. Beat this together and add it to the veggies and mix it all together. Fry it in a mix of vegetable oil and sesame oil in a frying pan over medium heat for 15 minutes on each side. If you use a non stick pan it works best and you won't need much oil.
I served it with a soy based sauce. Just mix a few T. of soy sauce with 1 tsp. of sesame oil, 2 tsp. honey, 1 tsp siracha or gochjang, 2 T. rice vinegar and sesame seeds.
It was excellent.
While rummaging through my freezer, I found a forgotten pie crust.
And I made a pumpkin pie. This is the first time I've ever made a pumpkin pie in March. Well, why not?
It is delicious and a real treat to have when pumpkin pie is a distant memory.
I even made some whipped cream.
I had a package of ground turkey I needed to use so I made Asian lettuce wraps.
I added water chestnuts, onions, garlic, ginger and carrots and cooked it in a savory sauce.
Another healthy meal.
I've been making lots of omelets using mostly egg whites and just one yolk. I've been serving them on huge beds of sauteed veggies. This one is mushrooms, onions and chard.
This one is on a bed of kale. I told my husband he is lucky he picked me to quarantine with.
