I made quite a few of these loaves yesterday to go with the big Irish dinner I gave to family and friends. We had Guinness braised corned beef, colcannon, roasted turnips, carrots and parsnips all served with a rich gravy made from the braising liquid. The Recipe:
Ingredients
- 4 cups flour
- 1 cup sugar
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 1/4 cup buttermilk
- 2 eggs
- 1 cup raisins
- 1 sick butter, melted
- sugar to sprinkle on top
Instructions
- Preheat the oven to 350 degrees.
- Measure all ingredients and place them into a large bowl. Mix well.
- Butter a cast iron skillet and place the dough, mounded, into the pan.
- Sprinkle the top with sugar.
- Place into the preheated oven and bake for approximately 1 hour. Insert a toothpick or cake tester into the center to check to see if it is done. The toothpick should come out clean with no dough on it.
