I took the leap and planted all my tomatoes, peppers and eggplants today. If by some weird quirk we get a cold spell I'll just cover them. That is what the hoops are for on the raised beds. I also realized I need to build another raised bed. Gulp! Am I planting too much or not enough. If I am no longer blogging in August it might be because I am up to my ears in veggies and can no longer write. This is sort of scary not knowing if I've under or over planted. I know what I have sprouting in my garage under those lights and then I look at my yard and try to do the calculations. I am eyeing the grassy area around my pool. How bad would that look? I don't think I've ever seen a pool in the middle of a vegetable garden. But I can picture floating on a raft eating tomatoes! Hmmmm...not a bad idea????

The publicist dehdrated zucchini, tomatoes, mushrooms (not that she grew them)too many fruits to remember, peppers, and they worked beautifully.
There is only so much freezer space...
We are trying eggplant this year too.
When the product is dried you store it. I put mine in canning jars. I have one of those vacuum seal things so I could suck all the air out of the jar.
I know that the woman who write the Rabbit Hill Farm blog is making a solar powered dehydrator which is also an option if you have a lot of sun.
Have a great weekend :)
BTW - my feeling is you can never grow too much because you can always give it away!

Don't know if you checked out my broom posts - but do!! Am loving my 'magic broom' - my oldest grand dau. asked 'is it really magic? Can you fly on it??" while her 4 yr old sister began dashing around on the broom . . .
