This is an old recipe which I had not made in years. I had extra red hots left from Christmas so I thought I would whip up a batch of these. Red hots are those red cinnamon flavored cookie decorations.
Add 1 1/2 cups of sugar to a heavy pot. Add 1 1/2 cups of water, 30 red hot candies, 1/4 tsp. cinnamon and 1/4 tsp. nutmeg. Bring this to a boil and whisk until the sugar and the red hots dissolve.
Peel and core 6 medium Granny Smith apples.
You can make your own pie crust but store bought crusts that roll out work just as well. You need two 9 inch circles. Cut each circle into thirds.
Wrap each third around an apple. Cut one caramel into thirds for each apple. Place them in the empty center.
Place the apples in a 9 X 14 inch pan.
Sprinkle the apples with cinnamon sugar.
Divide 1 tablespoon of butter and place it in the center of each apple on top of the caramel.
Pour the red hot syrup over the apples.
Bake them in a 400 degree oven for about 1 to 1 1/4 hours basting with the syrup every 15 minutes. The tops should be golden brown when they are done.
I guess you could serve them with vanilla ice cream but they are perfect just as they are.

After the middle of February, when we are through with our trips back and forth to Mayo's for a while, I'm going to take a day and do nothing but go back through all of your posts, collecting all of the recipes that I've wanted to make, but haven't had the time to write down. Maybe two days. . .
And by the way. .roasting the turkey, breast down made such a difference! I'm only sorry that I didn't learn that trick years ago. And the soup? THE best!!! Thanks again for sharing all of this goodness with us!
Have a great day!
Christer.
I have to check out your bean soup recipe- I love hearty bean soups! It will be a while before I make sweet treats, have to undo the damage from Halloween through Christmas.
