Chili Sauce

I got this recipe from Bev at Beverly's Back Porch. She got it from Laurie. Please treat yourself to visiting Laurie's blog to see her fabulous paintings! I could look at her work all day. This sauce is really great stuff. Don't be put of by it being called chili sauce. It is not spicy. You could make it spicy if you wish but I think it is perfect just the way it is.

Put a 19 0z. can of tomatoes in a heavy pot. Add 1 large diced red pepper and 1 large diced green pepper. Dice 1 large onion and add it too.

Add 1/4 cup of white vinegar.

And 1/3 cup of packed brown sugar.

Add 1/2 teaspoon of salt and 1/2 teaspoon of dry mustard powder.

Make a spice pack using 1 bay leaf, 10 black peppercorns, 5 juniper berries and 2 teaspoons of celery salt. Or you can use 2 teaspoons of pickling spice and 2 teaspoons of celery seed. Tie this up in the cheesecloth and add it to the pot.

Push it down to submerse it in the tomatoes.

Bring this to a boil and then turn it down and simmer it for about 45 minutes. Remove the spice bag and pour it into hot jars and refrigerate. You might want to can this but it is so good that it won't last long in your refrigerator.

I served this with my New Years food but the uses for it are endless. It would be wonderful on hot dogs in place of relish. It would make a great accompaniment to curries in place of chutney. It would also be great served on cream cheese and crackers. This is really good stuff!

This stuff flys out of my house! The recipe she gave me that I make in the summer with fresh tomatoes is even better, if you can believe. That was the recipe from her grandmother. She must be in heaven wondering what all the fuss is about. Laurie said she would be pleased that everyone loves it so much.

Great spice combo. Love working with juniper berries, too. Thanks for sharing, 'cause I now have a great hostess gift for some upcoming events! Laurie's paintings are wonderful.

I have to ask you where you got the jars you put you Chili sauce in. I make a BBQ sauce and used to use a square 12oz jar very similar to what you have pictured. Did you buy those or are they ones you have saved? I would love to find a source again for those.
