I made this to be served with the Lebanese meatballs from yesterday's post.
Thinly slice 1 large onion.
Saute' it in a bit of olive oil.
Add 1/2 tsp. of black pepper, 1/2 tsp. salt and some sumac (optional).
Cook the onions until their edges start to brown then add 4 minced garlic cloves.
Push the onions to the side and add 1 pound of ground beef.
As the beef browns, add 1 packet Swanson's beef concentrate.
Squeeze in the juice of 1 lemon.
Add a large bag of spinach. Cover the pot for a couple minutes.
Stir together and taste for seasoning.
Serve over brown rice. This is a great dish all on it's own.
