This is a very popular sandwich in my part of the universe. Almost every bar and small restaurant offers their version. This is mine.
We have so many wonderful sausage choices. There are homemade sausages for sale all over our area. The Italian hot sausage I use is not too spicy. If you don't like spice, you can use a mild Italian sausage instead.
In a bit of olive oil, saute some onions, peppers and diced garlic. Don't overcook it. It should still have a bit of crunch to it. Add salt and pepper.
In another pan, cook your sausage in a bit more oil.
Let it get nice and brown and cooked through. Set it aside.
Add the veggies to the oil in the sausage pan and stir it around to coat.
You can use any kind of roll you like but they are really good if you make your own.
Slice the sausage into 1/2 inch disks. This makes the sandwich easier to eat than if you use a whole link.
When your buns are ready, split them almost in half.
Load on some sausage, onions and peppers.
You can melt sliced mozzarella or provolone on top but I prefer them plain. During warm months, you can cook the pepper mixture inside and grill the sausages outside for added flavor.

Swedish sausages doesn't work for this, too low quality to be honest. Thankfully we now days can find sausages from all overb the world in even the smallest grocery stores :-)
This is a must try!
