Mexican Rice

Mmmmm...I love Mexican rice.  Unfortunately, it usually tastes like it came out of a box.  This recipe is very simple and the best I have ever tasted.
Put 1 C. of rice in a heavy pot.

Add 2 C. of chicken stock.  I used Swanson's Mexican Tortilla infused broth.

Add 2 T. of butter and 1 tsp of salt.  Stir this around and bring this to a boil then cover and simmer for 20 minutes.

While the rice is cooking, saute 1 small diced white onion in 2 T. of oil along with 4 diced garlic cloves.  Sprinkle 1 T. of ground cumin and some black pepper over it.

Cook this until the onion softens.

Add 1/3 C. of tomato paste and stir it in.

Add this to the cooked rice and stir to combine.

Add 1/3 C. of fresh lime juice.

Add some shredded fresh cilantro if you have some.  I did not.  I miss my herb garden.

That sounds good- I have never eaten Mexican rice! Love that tomato paste, too, but you cannot find it around here at all- xo Diana

I fry my rice in the onion garlic first, then add my tomato paste ( I usually use salsa instead of the paste) then add the chicken broth and let it cook.

The flavors seem to get in the rice better that way to me!
