Meatloaf Sandwiches

I made these for my husband and The Chef yesterday.  Give my husband meatloaf in any form and he is one happy man.
Make your favorite meatloaf.  I made three because I never cook a normal amount of food and because I am always giving food away.

Covering them in bacon adds such good flavor.  I forgot to take a pic of them finished but they looked great. BTW...I always use thin sliced bacon so it cooks thoroughly.

I made my white Maritime bread for these. This is the easiest loaf to make and is perfect sandwich bread.

 The recipe:

Pour 1 C. of warm water in the bowl of your mixer.  Add 3 T. of sugar, 1/4 C. of softened butter, 1 T. rapid rise yeast, 3/4 tsp. salt and 3 C. of flour.  Beat it until it comes together into a smooth ball.  Knead it in your mixer or by hand for about 8 minutes.  Place it in a buttered covered bowl and let it rise for about 1-1/2 hours.

Form the punched down dough into a loaf and place it in a  buttered loaf pan.  Cover it and let it rise until doubled which will take about an hour.  It should be cresting the top of the pan.

Bake it at 350 degrees for about 40 minutes.

It should sound hollow when tapped.

I rotate the pan halfway through the cooking time.

 Cool it on a rack.

I added thinly sliced onion, crunchy lettuce and cheddar cheese slices to the sandwich.  Normally I would slather this sandwich with mayo but it is kryptonite to my husband....go figure!  His was served with HP sauce on the side.  The Chef got mayo and lots of it!

My gawd, how would anyone even fit their mouth around that huge sandwich! I'm sure the guys loved it.

Is it wired into men's brains to love meat? I guess as long as it doesn't moo or whatever guys are fine with it.
David is the same way. He loves my Friday night meatloaf and even better for lunch on the weekend in the form of melted cheese on top in a sandwich.

That sandwich looks so good! I think Alex would like a meatloaf sandwich. He's a huge HP fan...I would slather it with mayo too! :)

There is nothing that says "Fall" like a meatloaf! It is my favorite comfort food.

I agree, meatloaf is always right in all kinds of ways :-) :-) I do like to put some of the leftover on sandwiches too, it's almost better a day after :-)

Have a great day!

Christer.

What kind of a pan do you use to bake your bread? Looks like ceramic? I want to get back into break making and need to get some new pans. The metal ones always seem to burn the bread.

How I *wish* I lived nearby to get some of your homemade food to give away!
I showed this to my Retired Man. He loves meatloaf, but I can take it or leave it. However, the sad look on his face when, after reading this post made me feel guilty. I just might make it now.
