Pressed Sandwiches

 If you are planning any picnics this Summer, you might want to make some of these sandwiches.  Pressing these makes them easy to transport and they hold together very well so they are easy to eat.  Not to mention how delicious they are.

 You can use either focaccia or ciabatta to make them.  I like to use focaccia.

 You can also use any combination of meats and cheeses you like.  I tend to make Italian pressed sandwiches.

 First I spread them with pesto and then add mozzarella, prosciutto, salami, mortadella, sundried tomatoes, Italian seasoning and provolone.

Wrap them tightly in plastic wrap and place them in the refrigerator.  Place several large heavy books on them and then a heavy pot or something to weight them down.  Let them sit like this for 24 hours then unwrap them and slice them into serving size and wrap as desired.  For box lunches or buffets, I wrap them in waxed paper and tie them with twine.

If you make this to use in the above recipe, use the dough to make one loaf so it is thicker and easier to slice for the pressed sandwiches.

Interesting. I thought pressed sandwiches were the result of accidentally sitting on a sandwich.

These used to be my all-time favorite sandwiches, back when I ate bread. I LOVE picnics!
That's a smart idea! I've never thought of pressing them together like that. Thin-bread would work well since it already is so flat.

Probably the original pressed sandwich WAS from an accidental sit down LOL!

You always give me such good ideas! I have prosciutto in the fridge but no one in my family loves it, maybe if I stick it in a pressed sandwich filled with other things, will tolerate it better!
