A Quick Delicious Angel Hair Pasta Recipe


 I was very busy the other day and needed to throw together a quick dinner so I made this pasta.  It took about 10 minutes and it was wonderful.

 It will be even better when my own tomatoes are ready.  I used a couple Amish hoop house tomatoes for this recipe.  Cut three tomatoes in half and grate them on a box grater over a heavy sauce pan. Grate it right down to the skin and then toss the skin out.

 Chop up some fresh basil.


 Heat the sauce over medium heat, add some salt and pepper to taste, 1 tsp. of sugar and 2 T. of tomato paste.

 Boil a box of angel hair pasta until al dente and drain.


 Add a couple tablespoons of butter.

 I used the scape compound butter I made the other day. You can use garlic butter or just plain butter.  Toss to coat the pasta as the butter melts.


 Add the sauce and toss quickly.  This is why you want the pasta slightly undercooked; it will continue to cook when you add the warm sauce to it.


 Add the basil and abut 3/4 cup of grated Parmesan cheese.

Mangia!  You can't really get a fresher sauce than this.

Sounds very good. Not much different from my favorite sauce. Tomatoes chopped and cooked with onions after they've been softened. Cook until tomatoes are soft, add basil and then puree. Bit of sugar to cut acidity of tomatoes.
