Dinners

The Blog Tech requested chili to eat while he watches Sunday football so I whipped up a batch yesterday morning.  I make so many different kinds of chili but this simple recipe is the one which everyone seems to like best.

Ingredients

  • 2 lbs ground beef
  • 29 ounce canned tomato sauce
  • 2 cans of pinto beans drained
  • 1-28 ounces canned tomatoes chopped
  • 3 T. tomato paste
  • 1 T. worcestershire sauce
  • 2 T. hot sauce
  • 1 white onion diced
  • 1 diced green pepper
  • 1 diced poblano pepper
  • 2 stalks celery diced
  • 1 red pepper diced
  • 2 tablespoons cumin powder
  • 1 T. garlic powder
  • 1/4 cup chili powder
  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • 1 cup tomato juice
  • 1 tsp. thyme
  • 1 tsp. oregano
  • 1/4 tsp. liquid smoke

Instructions

  • In a heavy bottomed stockpot brown the ground beef.
  • Drain the fat.
  • Add in the rest of the ingredients.
  • Cook in a 325 degree oven for 1-1/2 hours, uncovered  and stir occasionally.
  • Serve with shredded cheddar cheese and diced onion.

And The Blog Tech, being the blog tech, also requested my Asian salmon.  I bought some Scottish salmon and marinated it overnight in a soy based marinate.  You can find the recipe here:

Boil it until it starts to blacken.

I cooked the kale in a pan with a bit of olive oil and salt and pepper and then add the marinate  from the salmon.

I packed it up on top of a bed of sticky rice.

I also made some Korean cucumbers to eat with it.
