Still Cooking Here

Just a quick post to show you a quick meal and let you know that yes, I still cook.  I'm so busy these days that our meals tend to be ones that can be thrown together quickly and this is one of them.  I can't wait to get back to my old way of cooking...long and complicated!  Yesterday, I made Greek meatballs served in, god forbid, store-bought pitas which tasted like cardboard to me.  But, you gotta do what you gotta do, right?!

I mixed ground lamb with an egg, panko bread crumbs, 1 grated small onion, 3 cloves of diced garlic, S&P, 1 tsp. of cumin, 1 tsp. oregano and 1/2 tsp. of ground coriander.


I also made a lemon vinaigrette.



Mix the meat and spices thoroughly.


Use a cookie scoop to form the balls.


Bake on an oiled sheet pan at 350 degrees for about 25 minutes until cooked through.


I made a mushroom pilaf to serve on the side.


Toss some crisp lettuce with the vinaigrette and stuff it in a pita. Add some meatballs and sprinkle with feta cheese.



I also made some tzatziki to serve on top of the sandwiches. Not bad for a quick meal...except for the pita!

I bet everyone still ate them all right up! Even with store-bought pitas!

That was a quick meal? That would've been long and complicated in my book. I love short and easy. Can you tell I hate to cook? It looks delicious, and I'm sure it was.
